Welcome to Understory. We create meaningful experiences with fine chocolate. Founded in 2013, Understory’s work showcases how flavours make you feel through art, psychology, technology and chocolate.
Understory is unique because it sits at the crossroads between psychology, science, art and premium chocolate. James, whose background is in food art and interaction design brings an understanding of how to craft meaningful experiences. Annie, who is a PhD student in the Nutrition and Behaviour Unit at Bristol University, brings research, psychology and high-skilled knowledge. Understory were trained by one of the most celebrated bean to bar manufacturers in the UK; the Chocolate Tree.
Understory has a unique skill-set to change the way people eat. We have created a range of mindfulness chocolate events, fusing immersive theatre, psychology and tasting. Through a combination of science and art, we have learnt how to execute mindful eating and we are developing a commercial product based on our market research.
Our first bars, Chapter One, were released in 2017. We hand-make our chocolate with the incredibly rare and highly prized Marañón cacao from Peru. Each bar is wrapped in screen printed artwork designed by local artist Naio and printed by artist Arthur Buxton. The artwork is of 8000 year old cave paintings at the top of the Marañón Canyon, a day’s hike from the farms.
